Black Bean And Pineapple Salsa |

The pineapple adds a nice sweetness and acidity to this salsa. It's great as a dip, but also as a sauce for grilled chicken. If you don't have grilled corn, canned will work, too. Ingredients:
1 cup corn, grilled and cut off the cob |
2 tsp. canola oil |
1 can black beans, rinsed and drained |
1 cup fresh pineapple, chopped |
1 cup tomato, seeded and chopped |
1 cup cherry tomatoes, quartered |
1/2 cup red onion, finely chopped |
1/4 cup cilantro roughly chopped |
1 orange bell pepper finely chopped |
1/2 jalapeno, seeded and finely chopped |
juice of 1 lime |
salt and pepper to taste |
Directions:
1. Combine all ingredients in a large bowl and stir well to combine flavors. Cover and refrigerate for one hour. 2. Serve as a salsa for chips or spoon over grilled chicken or fish. |
