Black Bean and Mango Salad |

simple, zesty, I served it with grilled chicken and it was a hit Ingredients:
1 (15 ounce) can black beans, drained and rinsed (i used bush's) |
2 cups mangoes, diced |
1 cup red sweet bell pepper, diced |
6 green onions, thinly sliced |
1/4 cup cilantro leaf, chopped (you can substitute 2 t. of dried) |
1/4 cup fresh lime juice (fresh is best) |
1 tablespoon olive oil |
salt |
Directions:
1. combine ingredients in a bowl - toss, let it rest for about 2 hours, serve cold. |
