Black Bean and Goat Cheese Spread |

Mirin is a syrupy, golden-colored Japanese rice wine used to add a touch of sweetness and flavor to your favorite dish. Mirin can be found in Asian markets and some supermarkets. An equal amount of white grape juice can be substituted. Ingredients:
2 teaspoons olive oil |
1 medium onion, sliced |
3 garlic cloves, crushed |
1/4 teaspoon salt |
1/4 cup mirin (sweet rice wine) |
1 (15-ounce) can black beans,rinsed and drained |
1 (5.3-ounce) package goat cheese |
1/3 cup sliced green onions |
1/4 teaspoon black pepper |
Directions:
1. Heat oil in a medium nonstick skillet over medium-low heat. Add onion, garlic, and salt. Cook 25 to 30 minutes, stirring often, until browned. Add mirin; bring to a boil. Reduce heat, and simmer, uncovered, 5 minutes or until liquid is absorbed. 2. Place onion mixture, beans, and remaining 3 ingredients in a blender or food processor; process 1 minute or until smooth, scraping sides of bowl occasionally. Cover and chill at least 2 hours (mixture will thicken as it chills). |
