Black Bean And Fresh Corn Salad |

I worked with a woman whose mom was from Mexico, and apparently an amazing cook. She shared some of her mom's recipes with me, and I have to say this is one of my favorites...it's so simple, yet so full of flavor. Read more . I am addicted to this stuff, and it's actually good for me!! I have to say that using fresh sweet corn right off the cob (I freeze many bags at the peak of the season to use all year round) puts this salad over the top. Ingredients:
3 ears of sweet corn, boiled for 3 minutes, then drained, cooled and cut off of cob |
1 can black beans, drained and rinsed |
2 scallions, whites and greens, chopped finely |
1/2 red bell pepper, de-seeded and diced finely |
cilantro, to taste (i chop a little less than 1/2 a bunch) |
dressing (i just ‘eyeball’ amounts |
1 tablespoon cider vinegar |
1 tablespoon olive oil |
fresh squeezed juice of 1 large lime |
cumin, to taste (i use a good teaspoon, or more - just keep tasting it) |
salt and pepper, to your taste |
Directions:
1. Just throw it all together, stir to coat with the dressing, and keep it chilled. |
