This delicious salsa/salad recipe is courtesy of Southern Living Magazine. I serve it as a salsa with tortilla chips and it goes like crazy! You can make as much as you want, which is my way of saying I do not know the number of servings. Read more ....ha! Ingredients:
1 17 oz. can corn (drained) |
2 -15 oz. cans black beans (drained and rinsed) |
2 large tomatoes (chopped) |
1 large red onion (chopped) |
1/8 to 1/4 cup cilantro (chopped) |
1 large avocado (chopped) |
dressing |
3-4 tablespoons lime juice |
2 tablespoons olive oil |
1 tablespoon red-wine vinegar |
1 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. Combine , cover and chill! Easy, huh? 2. I use one whole bunch of cilantro and 2 to 3 avocados. |
