This salsa is great just served with tortilla chips, but it also works well as a salad or a topping for grilled chicken. Add some shredded grilled chicken and it makes the perfect salad to take on a picnic. Ingredients:
2 cans black beans, rinsed |
1 bag frozen white corn, thawed and rinsed |
1 large red bell pepper, finely chopped |
1/2 red onion, finely chopped |
1 bunch cilantro, finely chopped |
juice of 1 1/2 limes |
3 tablespoons each olive oil and balsamic vinegar |
3/4 teaspoon cumin |
1/2 teaspoon seasoning salt |
Directions:
1. Mix all ingredients together in large bowl. |
