Black Bean And Corn Salad |

This has a 30 minute standing time. Ingredients:
1 cup whole kernel corn |
2 (16 ounce) cans black beans, rinsed and drained |
1/4 cup chopped fresh parsley |
2 tablespoons minced red onions |
1/4 cup balsamic vinegar |
1 1/2 tablespoons olive oil |
1 teaspoon lemon juice |
1 teaspoon minced garlic |
1 teaspoon brown sugar |
salt and pepper |
Directions:
1. In lg bowl, combine all ingredients. 2. Let marinate at room temperature for 30 minutes. 3. Add salt and pepper to taste. 4. Serve on a lettuce leaf. |
