Black Bean And Corn Chowder |

This is perfect for a cold day and it is so easy. Its much better if its left to sit in the fridge over night and reheated. (isnt everything?) Ingredients:
1 quart chicken stock |
1 can black beans |
1/2 yellow onion ' diced small |
2 ribs of celery ' fine chop |
1 clove garlic ' minced |
1 c frozen corn |
1 tbs butter |
2 tbs cream |
pinch of cayenne |
pinch of red pepper flakes |
salt to taste |
Directions:
1. over medium heat soften your celery and onion and a pinch of salt until translucent 2. add garlic and simmer for one more minute 3. add the whole can of beans 4. add the stock and simmer for about an hour 5. add the corn, cream and spices 6. enjoy! |
