My version of another calorie count recipe - serve as a side (10 servings) or main (5 servings). Great with reduced fat sour cream or yoghurt. Ingredients:
2 cloves garlic, chopped |
1 onion, chopped |
2 tbsp olive oil |
780 g (2x 390g cans) black beans, drained & rinsed |
800 g (2x 400g cans) chopped tomatoes |
2 tbsp tomato paste |
410 g (2 cups) corn |
2 tsp sugar |
2 tsp chili powder |
2 tsp cumin |
1 green pepper, chopped |
Directions:
1. Saute onion and garlic in oil until onion is clear. 2. Add beans, tomatoes, tomato paste, corn, sugar and spices. Mix and heat to boiling then reduce heat and simmer. 3. Add green pepper and continue simmering until tender. 4. Read more: /black-bean-corn-chili-recipe-r33553#ixzz0t4u6JVFJ |
