Grape tomatoes, scallions, corn, and black beans dot this colorful Black Bean and Chicken Salad. This salad is a perfect choice for lunch or dinner. Ingredients:
2 tablespoons lemon juice |
2 tablespoons white balsamic vinegar |
1 clove garlic, minced |
1/8 teaspoon salt |
1/4 cup extra-virgin olive oil |
1 15-oz. can black beans, drained and rinsed |
1 8 3/4-oz. can whole-kernel corn, drained |
1 pint grape tomatoes, halved |
8 cups mixed greens |
4 cups shredded skinless meat from 1 rotisserie chicken |
1/4 cup scallions, white and light green parts, thinly sliced |
Directions:
1. Whisk together lemon juice, vinegar, garlic, salt and olive oil. In a large bowl, combine beans, corn and tomatoes; toss with 2 Tbsp. of vinaigrette. 2. Divide greens among 4 plates. Top with chicken, bean mixture and scallions. Drizzle with remaining vinaigrette. |
