Colorful and delicious bean-patch salad.
Ingredients:
* 1 teaspoon brown sugar
* 1 teaspoon grated lime rind
* 1/4 cup fresh lime juice (about 4 limes)
* 1 teaspoon chili powder
* 1/2 teaspoon ground cumin
* 1/4 teaspoon salt
* 1 tablespoon olive oil
* 1 item 15-oz can black beans, rinsed, drained
* 1 item can black-eyed peas, rinsed, drained
* 2 cup frozen whole kernel corn, thawed
* 1/2 item small green bell pepper, diced small
* 1/2 item small red bell pepper, diced small
* 1 item head lettuce cups (bibb or butter)

Directions:
1. In large bowl, whisk together dressing ingredients.
2. Add beans, peas, corn and bell peppers.
3. Stir to mix and coat.
4. Cover and chill for one hour.
5. Place lettuce cups on serving platter; spoon bean mixture into lettuce cups.
