Black Bass With Mushrooms |

Simple, quick and delicious. From the Mississippi Valley chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Ingredients:
2 lbs whole black bass |
salt and pepper, to taste |
1/3 cup almonds, chopped |
1/2 cup fresh mushrooms, chopped |
1/3 cup butter, softened |
2 tablespoons fresh parsley, minced |
Directions:
1. Preheat oven to 400°F. 2. Clean fish and place in a shallow casserole dish. 3. Season with salt and pepper. 4. Mix almonds, mushrooms and butter; spread over fish. 5. Sprinkle with parsley and bake for 20 minutes. |
