Black and White Bean salad with Quinoa Ingredients:
2 cups navy beans |
2 cups black beans |
1/4 cup quinoa |
1/4 cup tarragon |
1 cup cucumber, chopped |
1 medium onion, chopped |
1/4 cup vegetable oil |
3 tbsp lime juice |
3 tbsp rice vinegar |
1/4 tsp chili powder |
1 salt and pepper |
Directions:
1. Add beans in large bowl 2. Boil Quinoa until tender; drain and add to beans 3. Add tarragon, onion and cucumber 4. In separate bowl, add vegetable oil, lime juice, rice vinegar, chili powder, and salt and pepper; whisk together until emulsified 5. Add dressing to the salad; toss and serve |
