Black And White Bean Salad |

This recipe is a favorite side dish in our family. It is a quick fix for potlucks too. Ingredients:
1 can 15 oz. black beans rinsed and drained |
1 can 15 oz. white kidney beans rinsed and drained |
1/2 cup chopped cucumbers |
1/2 cup chopped red peppers |
1/4 cup minced cilantro or parsley |
1/3 cup red wine vinegar |
1/4 cup olive oil or vegetable oil |
1/2 t salt |
1/4 t garlic powder |
1/8 t pepper |
Directions:
1. Place beans, chopped vegetables and herbs into bowl. 2. Whisk vinegar, oil and seasonings together in a small bowl. 3. Pour over the vegetables and gently toss to coat thoroughly. 4. Chill before serving. |
