This is a dessert ravioli. It is thoroughly enjoyed by my family.I hope your family enjoys it as much as mine does. Ingredients:
2 ozs. bittersweet chocolate |
1 cup (2 sticks) butter, softened |
1/2 cup sugar |
1 egg |
1 1/4 tsp. chocolate extract |
1/4 baking soda |
dash of salt |
2 1/2 cups flour |
1 1/4 cups seedless raspberry jam |
powdered sugar, to garnish |
Directions:
1. Melt chocolate in the top of a double boiler. 2. Remove from heat, and cool. 3. In a large bowl, cream butter and sugar until blended. 4. Add egg, chocolate extract, baking soda, salt and melted chocolate. Beat until light. 5. Blend flour th make a stif dough. Divide dough in half, cover and refrigerate until firm. 6. Preheat oven to 350*. Lightly grease baking sheets. Roll out 1/2 of the dough to 1/8 thick between 2 sheets of waxed paper. 7. Repeat with other half of dough. 8. If dough becomes too soft, refrigerate until firm again. 9. Cut dough into 1 1/2 inch squares. 10. Place 1/2 the squares, 2 apart, on the baking sheets. 11. Spoon about 1/2 tsp. jam in to the center of each square and top with another square. 12. Press edges of squares together with a fork to seal. 13. Bake for 10 minutes or just until edges are browned. 14. Remove and place on wire racks to cool. 15. Dust lightly with powdered sugar when completely cooled. |
