THIS IS LITTLE CROQUETTES MADE WITH BEEF - DUTCH/NETHERLANDS. I HAVE USED CHICKEN BEFORE OR YOU CAN USE ANYTYPER OF COLD MEATS YOU LIKE. IT IS PERFECT AT BBQ OR SATURDAYS WATCHING TELLY WITH A COLD BEER Ingredients:
45 ml butter |
60 ml flour |
250 ml hot milk |
15 ml worcestershire sauce |
30 ml chives, finely chopped |
375 ml rare roast beef, finely chopped |
salt |
ground pepper |
flour for dusting |
2 extra large eggs, beaten |
375 ml dried breadcrumbs (i make my own with stale chiabata or panini) |
dijon mustard for serving |
Directions:
1. MELT BUTTER IN A SAUCEPAN 2. ADD FLOUR AND COOK FOR A MINUTE 3. GRADUALLY ADD HOT MILK, STIRRING UNTIL SAUCE THICKENS 4. ADD WORCESTERSHIRE SAUCE, CHIVES, BEEF AND SEASONING 5. POUR MIXTURE ONTO A BAKING SHEET AND ALLOW TO COOL 6. ROLL TABLESPOOONFULS OF COLD MIXTURE INTO BALLS 7. DUST BALLS IN FLOUR, DIP IN EGG AND COAT IN BREADCRUMBS 8. PUT IN FRIDGE FOR 30 MINUTES TO SET 9. HEAT 4 CM OIL IN A PAN AND FRY BALLS IN BATCHES UNTIL GOLDEN 10. DRAIN ON KITCHEN PAPER 11. SERVE WITH MUSTARD 12. ENJOY :) |
