A lovely salad I copied out of a What's Cooking Magazine Ingredients:
6 cups torn boston lettuce |
3/4 cup bacon bits |
1/2 cup red onion, thinly sliced |
4 hard-boiled eggs, chopped |
1/2 lb fresh green beans, trimmed, blanched |
1 cup crouton |
1/3 cup balsamic vinaigrette |
Directions:
1. Blanching the beans: Add to a large pot of boiling water; cook uncovered 3 minutes, drain and immediately plunge beans in bowl of ice water to stop the cooking process. Cool completely and drain, then pat dry. 2. Cover plate with lettuce. 3. Arrange remaining ingredients in rows over lettuce. |
