Bisquick Salmon Asparagus Bake |

I stock up on canned salmon when I find a good sale price - it's a quick start to dinner on the nights I'm only cooking for myself. You can substitue tuna for the salmon in this casserole if you prefer. Ingredients:
2 (10 ounce) packages frozen cut asparagus, thawed and well drained |
8 medium green onions, sliced (1/2 cup) |
3 cups shredded swiss cheese (12 ounces) |
2 (7 ounce) cans salmon or 2 (7 ounce) cans tuna, drained and flaked |
1 1/2 cups original bisquick baking mix |
1 1/2 cups milk |
1 tablespoon chopped fresh basil or 1 teaspoon dried basil leaves |
1/4 teaspoon pepper |
4 eggs |
Directions:
1. Heat oven to 400ยบ. Spray rectangular baking dish, 13x9x2 inches, with cooking spray. Sprinkle asparagus, onions, 1 1/2 cups of the cheese and the salmon in baking dish. 2. Stir remaining ingredients except cheese until blended. Pour into baking dish. 3. Bake 40 to 45 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1 1/2 cups cheese. Bake about 2 minutes or until cheese is melted. Cool 5 minutes before cutting. |
