Biscuits Like Grandmas But Lower-fat |

This recipe was my grandma's, but I have altered it slightly to make it low-er fat. Ingredients:
4 cups all-purpose flour, plus more for dusting |
2 tablespoons baking powder |
1 teaspoon coarse salt |
2 teaspoons sugar (you can use splenda, if you want) |
1 cup (2 sticks) unsalted butter, cut in pieces |
2 cups 1 % milk (or heavy cream, if you're not weight-concious) |
Directions:
1. Preheat oven to 400 degrees. 2. In a medium mixing bowl, combine flour, baking powder, salt, and sugar. Whisk together well. 3. Add the butter, and, using a pastry blender or two knives, cut in the butter until mixture resembles coarse crumbs. 4. Add the milk and stir just until dough comes together; it will be sticky. 5. Transfer to a lightly floured work surface, and, with floured fingers, pat dough to a 1-inch thickness. Use a 2 1/2-inch round biscuit or cookie cutter to cut the biscuits, cutting as close as possible so there are very few scraps. 6. Transfer to a baking sheet. Bake until lightly browned, about 20 minutes. 7. Remove from oven; cool on a wire rack. Serve warm. |
