My Mother often made this but we were Irish/English ;) I think my mother added dessicated coconut but I don't know the measurement because I'm allergic to it. It's really a user friendly recipe and one that you can play around with. Ingredients:
1 lb. milk chocolate |
1/2 lb. butter |
1 lb. broken mixed biscuits, my mother used digestives, mcvities, arrowroot, sunwheat whatever cookies we had not finished. i have added oreo cookies and vanilla wafers as well. |
1/2 lb. walnuts, chopped |
1/4 cup maraschino cherries, drained and coarsely chopped |
1 tsp. vanilla extract |
note: i have also added quartered miniature flavoured marshmallows to this recipe. |
Directions:
1. Melt chocolate and butter together in a double boiler, stirring to blend well. 2. Mix the chocolate and butter in with the well broken biscuits, nuts, maraschino cherries and vanilla extract. 3. Pour into a 10 x 15 inch baking dish, lined with parchment paper. 4. Smooth to level the top and allow it to set. 5. Cut into fingers about a finger in thickness. |
