My girlfriend wanted me to create a dessert for her birthday ;.She had a cheesecake dessert at a restaurant that was covered with fruit and had a gelatin glaze. Her dessert had mandarin oranges and pineapple chunks and she liked the orange and yellow refreshing look it had. Read more . it was also sweet and she told was unbaked. I guess I did good as she said it was even better than the one at the restaurant!!! I prefer calling this a cheescake dessert. It does not have the texture of a baked cheesecake, yet it is sweet, creamy and fruity! Ingredients:
graham cracker crumb crust or a heavy dusting of graham cracker crumbs on buttered pan |
4, 8 oz pkg cream cheese or a mix of part low fat cream cheese |
1 cup sugar |
2 tsp vanilla or other flavor extract ( orange, or lemon etc ) |
2 cups light colored fruit juice ( orange juice, apple juice - drained mandarin orange liquid ) ) or water |
2 env of plain unflavored gelatin |
1 small can of mandarin oranges drained |
1 small can of pineapple chunks drained |
glaze |
1 pkg unflavored gelatin |
1 cup fruit juice or water |
sugar to taste if desired |
Directions:
1. Prep time does not include chilling of dessert 2. Prepare a standard recipe for graham cracker crust to fit a 9 or 10 inch springform pan. 3. I oiled the pan and used a heavy dusting of graham cracker crumbs 4. Beat the cream cheese, sugar and extract till smooth 5. In 1/2 cup of the liquid ( use the drained mandarin orange liquid but not the pineapple liquid ) in sauce pot, dissolve the gelatin, then add remaining 1 1/2 cups liquid ( add water if needed to make and stir and melt over low heat to fuly dissolve gelatin 6. Beat the gelatin mixture into the cheese mixture 7. Spread cheese mixture in to prepared pan 8. Carefully arrange the drained fruit ( pat dry ) over the cheese mixture into a decorative pattern 9. Chill 10. Meanwhile make a clear glaze using the envelope of plain gelatin, a tsp or so of sugar and 1 cup of light fruit fuice or water per package instructions 11. When cool, spoon liquid over the fruit and chill well till fruit is glazed and gelatin set firm |
