This yummy breakfast recipe comes from the January 2009 issue of *recipes+* magazine, and comes in at just AU$1.60 per serve! You can use any dried fruit you like, or a combination of dried fruit. Substitute fresh bleberries if they are in season and reasonably priced. Prep time doesn't include overnight to soak. Ingredients:
1 1/3 cups rolled oats |
1/4 cup dried cranberries, finely chopped |
1/4 cup dried apricot, finely chopped |
1 cup unsweetened apple juice |
1 cup light vanilla yogurt |
120 g frozen blueberries, thawed |
1 apple, unpeeled and finely chopped |
2 tablespoons sliced almonds, toasted |
Directions:
1. Combine oats, cranberries, apricots, and juice in a medium glass bowl. Cover with plastic food wrap; chill for 6 hours or overnight to soften. 2. Stir in yogurt and blueberries, divide among serving bowls; top with apple and almonds, then serve at once. |
