My friend Naomi gave me this recipe some years a go. I love it and think it is the prettiest color for a Thanksgiving or Christmas dinner table. I've never added the pecans because my father will not eat nuts but I think they would be very good in it.( Cooking time includes refrigeration time)
Ingredients:
1 (12 ounce) can cola
1 (16 ounce) can pitted bing cherries
1 (20 ounce) can crushed pineapple
1 (3 ounce) box black cherry gelatin
1 cup chopped pecans (optional)
Directions:
1. Drain pineapple, drain cherries and save the cherry juice.
2. In a saucepan combine the cherry juice with the cola. Heat until boiling, then stir in the gelatin. Mix until gelatin is dissolved.
3. Remove from heat and stir in the drained pineapple, drained cherries and pecans if you are using them.
4. Spray gelatin mold with cooking spray and pour in the gelatin mixture.
5. Refrigerate at least 24 hours before unmolding.
