A special Maine Christmas dessert made for Davey by Nana down-river and then Auntie Marlene. Dates, brown sugar, walnuts, yummmmm!!!!! Serve warm with whipped cream or vanilla ice cream. Ingredients:
1 cup pearl tapioca |
5 1/2 cups water |
3 cups brown sugar |
1 cup chopped dates |
1 cup chopped walnuts |
2 tablespoons butter, melted |
1 pinch ground cinnamon |
1 pinch salt |
Directions:
1. Stir the tapioca into the water in a bowl, and allow to soak 8 hours or overnight. 2. Preheat oven to 300 degrees F (150 degrees C). Grease a 2-quart baking dish. 3. Mix the soaked tapioca, brown sugar, dates, walnuts, butter, cinnamon, and salt together in a large bowl; transfer to the prepared baking dish. 4. Bake until set, about 1 hour. Serve warm. |
