Bill's White Bean Soup Southern Style

This recipe is best using small white beans of some type and fresh spices where possible. Its easy and great anytime. Do not overcook the small white beans. Keep them whole and do not let them burst.
Ingredients:
1 bag dried small white beans
water, see directions
1 medium sweet onion
3 tablespoons olive oil
1 tablespoon basil (fresh and chopped)
2 tablespoons oregano (fresh and whole)
1 teaspoon pepper
2 teaspoons garlic salt
1 teaspoon cumin (ground)
1 (8 ounce) can chopped tomatoes (rotel orginal)
3 bullion cubes chicken
salt and pepper, to taste if needed
Directions:
1. Soak the beans overnight.
2. Chop the sweet onion and cook in the olive oil till tender.
3. Just before you finish the onion add all spices and cook for 1-2 minutes add to beans that are in a pot with water about an inch above beans.
4. Bring to a boil and cook 5 minutes then simmer till done 1-2 hours.
5. If you need to add water to keep level up add a cup at a time with a chicken bullion cube. Now Enjoy!
