Bills Savory Potato Frittata |

I surprised myself with this one. The lentil spouts worked perfectly and the small amount of banana pepper gave a savory but not hot taste. This was a really good treat for breakfast but you may want to cut back on the butter, fats and oil. Ingredients:
1/2 cup lentil or other sprouts |
1/2 lb shredded potatoes |
3 tbsp butter |
1 tbsp bacon fat |
3 tbsp olive oil |
1/4 ea medium onion; diced |
1 ea small clove garlic; mashed |
1 ea jumbo egg or 2 small |
1/2 cup buttermilk |
1 tbsp parmesan cheese; grated |
2 ea precooked bacon slices; cut crossways into 1/2 i |
salt and pepper |
pickled yellow banana pepper to taste; diced |
Directions:
1. Read all these instructions first before starting, 2. Preheat convection oven (450 if you can adjust it). 3. Start with a really big frying pan- 12 or 14 inches and turn up heat to 4. high 5. Heat butter, bacon fat and olive oil until melted 6. Pour half off into a metal cup 7. Add diced onions and garlic to pan 8. Spread sprouts over onion-garlic mix 9. Spread shredded potato over sprouts 10. Sprinkle diced peppers over potato 11. Season with a bit of salt and pepper 12. If mix in danger of smoking or burning, turn down heat to medium 13. Using a spatula, keep turning and stirring the mix for about 10 minutes. 14. Add more of the oil mix if needed. 15. Turn out half the combination and save for another purpose (potato soup?) 16. Take a small aluminum pan - say 4x8 inches or so and line with wax paper 17. Turn the rest of the combination onto the wax paper. 18. Be sure to scrap the bottom of the pan and add all the yummy brown bits to the top of the ingredients in the aluminum pan. 19. Sprinkle with bacon cuts. 20. Add the rest of the oil mix over the combination. 21. Blend the egg, buttermilk, more salt and pepper and the parmesan cheese in 22. a blender for a couple of seconds to mix well. 23. Pour over the combination ingredients in the aluminum pan. 24. Bake in the convection oven for 5 minutes until the egg is set. 25. Turn onto a serving plate and enjoy. |
