Bill's Good and Easy Butter Bean Soup |

I like Fresh butterbeans. I also like canned ones but not for this recipe. The prep time is less than 15 minutes and all you need that may be unusual is home made pasta sauce. So next time you make some and freeze a cup to use when you make this. You could use a canned pasta sauce but I am sure yours taste better. Give this a try you will really like it, Ingredients:
4 cups butter beans, shelled |
1 (10 1/2 ounce) can bean with bacon soup, condenenced just whats in the can |
32 ounces chicken broth low fat |
1 cup pasta sauce, homemade if possible |
1/4 cup sweet onion, chopped |
1 teaspoon salt |
1/2 teaspoon pepper, freshly ground |
1 tablespoon butter |
Directions:
1. Put all of the ingredients in a pot and bring to a boil for 5 minute Cover and cut temp but continue to slightly boil for another 5 minutes. Keep covered and simmerfor at lease 2 hours. Make sure the butterbeans are soft then serve. This freezes very well so double the recipe and freeze some for the winter. |
