Bilimbi is a tropical fruit that grows on a tree, grows in clusters and looks like a cucumber that is greenish yellow through and through. very fleshy and acidic. i makeshift with cucumbers and fresh chillies instead. Read more . skip the ending 10 mins , and 'braise' them for 2 mins only to keep the crunch but slightly cooked.
Ingredients:
20 whole dried chilies
1/2 tsp. shrimp paste
3 med garlic cloves
1/5 c tamarind juice
1/2 piece turmeric
2 tsp oil
1/2 salt
2 med onion, chopped
5 bilimbi sliced
2 tsp sugar
1 piece ginger
Directions:
1. -soak dried chillies in water for an hour. drain and wash
2. -blend chillies with all ingredient except bilimbi and onion
3. -heat oil in saucepan
4. -fry onion till' soft
5. -pour in blended ingredients
6. -cook 20 min on low
7. -add salt, tamarind juice, and sugar
8. -add bilimbi and cook for 10 min
9. -serve with rice or as dipping sauce
