Unless you live in England, Wales, Scotland and other parts of Europe you probably won't be familiar with bilberries. They are closely related to blueberries but not as sweet. In baked goods the taste is identical to the blueberry. Read more . This recipe called for blueberries but I substituted bilberries I had picked over the weekend. Ingredients:
2 cups all purpose flour |
1 tbsp baking powder |
1/4 cup granulated sugar |
1 tsp salt |
1/2 tsp ground cinnamon |
1 1/2 cups whole milk |
1/4 cup margarine, melted and cooled |
2 eggs, lightly beaten |
1 1/4 cups fresh bilberries (or blueberries) |
Directions:
1. Mix flour, baking powder, sugar, salt and cinnamon. 2. Mix milk, margarine and eggs. 3. Stir into dry mixture until well blended. 4. Stir in bilberries. 5. Heat a greased griddle until a drop of water sizzles. 6. Pour 1/4 cup of the batter onto the griddle. 7. Cook about 1 1/2 - 2 minutes each side. 8. Makes about 8 - 12 pancakes. |
