chicken curry can be served over rice Ingredients:
3/4 pound boneless skinless chicken breast |
2 tsp extra virgin olive oil |
1/4 cup chopped yellow onion |
2 cloves garlic |
2 tbsp whole wheat flour |
1 cup fat free low sodium chicken broth |
1/2 cup diced tomatoes, no salt added |
1/2 tsp worcestershire sauce |
1 tsp curry powder |
1/8 tsp cayenne |
1/4 cup fresh cilantro |
Directions:
1. add 1 tsp oil to saucepan over med-high heat. 2. Cut chicken into cubes and toss in pan until no longer pink. 3. Set chicken aside 4. Reduce heat to med, add remaining oil, onion, and garlic. 5. Cook about 5 min until it starts to brown. 6. Stir in the flour and broth. 7. Cook 4-5 min until thick. 8. Stir in tomatoes, worcestshire sauce, curry powder, cayenne, and reserved chicken. 9. Simmer 2-3 min. 10. Turn off heat and stir in cilantro. 11. Serve over rice (not included in total calories) |
