A very soft, chewey and perfectly spiced cookie! Ingredients:
3/4 cup butter, softened (no substitutes) |
1 cup sugar |
1 egg |
1/4 cup molasses |
2 1/4 cups all-purpose flour |
2 teaspoons ground ginger |
1 teaspoon baking soda |
3/4 teaspoon cinnamon |
1/2 teaspoon ground cloves |
1/4 teaspoon salt |
additional sugar |
Directions:
1. In a mixing bowl, cream butter and sugar. 2. Beat in egg and molasses. 3. Combine the flour, ginger, baking soda, cinnamon, cloves and salt; gradually add to the creamed mixture. 4. Roll into 1-1/2-in. balls, then roll in sugar. 5. Place 2 inches apart on ungreased baking sheets. 6. Bake at 350 degrees F for 10-12 minutes (start checking the cookies at 8 minutes) or until puffy and lightly browned. 7. Remove to wire racks to cool. |
