Big Old Fashioned Oatmeal Cookies

Came across this recipe on . I reduced sugar to 1 cup, substituted sunflower seeds for chopped pecans, and added raisins. I make these bi-weekly and that's just enough time in between. Really good tasting, I store in freezer bags for the lunch-box, and so I don't eat all of them! Enjoy! :)
Ingredients:
1 cup butter flavor shortening
1 cup brown sugar, firmly packed
2 large eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon baking soda
2 cups old fashioned oats
1 cup unsalted sunflower seeds, roasted
1/3 cup sesame seeds, lightly toasted
1/2 cup fancy sweetened coconut
1 cup golden raisin
Directions:
1. Heat oven to 350ºF
2. In the bowl of an electric mixer combine shortening and sugar. Beat at medium speed until well blended. Beat in eggs and vanilla.
3. In a medium bowl combine flour, salt, baking powder, cinnamon and baking soda. Mix into creamed mixture at low speed until blended. Stir in oats, sunflower seeds, sesame seeds, coconut and raisins with spoon.
4. Drop rounded tablespoonfuls of dough 2 inches apart onto ungreased baking sheets lined with parchment, and flatten with fork - 6 to a sheet, these expand and are large.
5. Bake for 10 to 13 minutes, or until lightly browned. Remove immediately to cooling rack.
