Even though I don't use mixes saved this - got this off a barbecue group- rated very highly because its moist and dense Ingredients:
2 boxes jiffy corn muffin mix |
4 eggs - beaten |
1 1/2 sticks butter - melted |
1 pkg ( 12 oz ) frozen corn - thawed |
1 med onion - diced fine |
1 cup small curd cottage cheese |
pinch of sugar |
chopped green chilis or jalapenos totally optional |
Directions:
1. Combine all ingredients - mix well and pour into buttered 9 X 13 2. casserole dish. 3. Bake in preheated 375 degree oven for 35-40 minutes..until 4. golden brown. |
