I had a salad like this once and spent I some time researching recipes until I came up with this. Now it's a hit, even for those who are not crazy about broccoli. Ingredients:
1 -2 head broccoli, washed and chopped |
1 red onion, diced thin |
1/2 cup golden raisin |
1/2 cup dried cranberries |
1 cup walnuts or 1 cup cashews |
1 cup mayonnaise, regular, light (even made with olive oil is good) |
1/4 cup cider vinegar |
1 tablespoon celery seed |
1 teaspoon shallot salt |
1/4 teaspoon dried tarragon |
1/2-1 teaspoon fresh ground pepper, to taste |
Directions:
1. Dressing: combine ingredients and whisk together until blended and smooth. 2. Combine salad ingredients in large bowl and add dressing. Refrigerate for one to two hours before serving. 3. You can also add fresh bacon bits if desired. 4. Enjoy. |
