Big Crock Pot Full of Pinto Beans |

A basic dried bean recipe for the slow cooker. Seasoned with smoked turkey pieces, this is a lower fat recipe with plenty of flavor. Ingredients:
2 lbs dried pinto beans (works for other dried large beans) |
1/2 smoked turkey drumstick (available at supermarkets cut into chunks) |
11 cups water, for soaking |
water (to cover for cooking) |
1 -2 tablespoon kosher salt (to taste) |
1/8 teaspoon black pepper |
1/8 teaspoon cayenne (or to taste) |
Directions:
1. Sort and rinse beans with 3 waters (from one container to another 3 times). 2. Place in a 5 to 6 quart crock pot with soaking water overnight (my preference, but it can be cooked without pre-soaking). 3. Note: a 4 quart crock pot will be absolutely full, but I have used a 4 quart pot. 4. Drain soaking water and add water to cover by 1 to 1.5 inches. 5. Add smoked turkey pieces. 6. Cook for 10 hours on low. 7. Add salt and peppers to taste. 8. Note: I have used cumin, thyme, and oregano for seasoning, but basic salt and pepper is very good). 9. Serve with cornbread. |
