Big Apple Cinnamon Muffins |

This recipe was originally from the Betty Crocker's Picture Cookbook, circa 1956 with bit of 2012 thrown in. I like big chunks of fruit in my muffins. Betty said to grate the apples, but I just peeled and chopped them. Ingredients:

1 egg |
1/2 cup milk |
1/4 cup olive oil |
1 1/2 cups of diced apples |
1 1/2 cup flour |
1/2 cup sugar |
2 tsp. baking powder |
1/2 tsp. salt |
1 tsp. cinnamon |
topping |
1/3 cup brown sugar |
1/2 tsp. cinnamon |
1/4 cup olive oil |
Directions:
1. Heat oven to 400 degrees. Grease muffins tins. 2. Mix egg, milk, oil, and apples in a bowl. 3. Mix flour, sugar, baking powder, salt, and cinnamon in a different bowl. 4. Add the flour mixture to the wet mixture. Stir until moistened. 5. Fill muffin tins until 2/3 of the way full. 6. Mix brown sugar, cinnamon, and oil to make a paste. Crumble on top of muffins. 7. Bake for 25 to 30 minutes. |
