I found this recipe in the first published addition of the Better Homes and Gardens Cookbook which was published in 1930. It works every time. Ingredients:
6 cups blackberries |
1/2 cup water |
6 cups sugar |
2 oranges, juice of |
1 grated orange, zest of |
1 lemon, juice of |
Directions:
1. Cook the berries with the water in a large stock pot until soft. 2. Rub berries thru a sieve to remove seeds. 3. Return mashed berries to pot. 4. Add the sugar, juice of oranges and lemon, and the orange zest; stir to combine. 5. Boil until thickened. Ladle into hot sterilized jars. 6. Add lids and bands and allow to cool completely. |
