Bff Spinach and Artichoke Dip |

My best friend got this recipe from her mom, and it was her party offering staple for a long time. I finally asked her for the recipe after begging and demanding she make it for several of my get-togethers. Now it's my own party offering staple. I always notice that it's one of the first things to disappear, no matter how big the potluck is. Ingredients:
1 (10 ounce) package frozen chopped spinach, thawed |
2 (6 ounce) jars marinated artichoke hearts |
3 large garlic cloves, minced |
1/2 cup mayonnaise |
1.5 (8 ounce) packages cream cheese, softened |
2 tablespoons lemon juice |
1 cup parmesan cheese, grated |
1 1/2 cups fine dry breadcrumbs (except i never use all of the breadcrumbs) |
Directions:
1. Drain spinach; press between layers of paper towels. Squeeze out as much of the water as you can. 2. Drain and chop artichokes. 3. Combine spinach, artichoke hearts, garlic, and next 4 ingredients, stirring well. 4. Spoon into lightly greased 11 x 7 x 1 1/2 inch baking dish; sprinkle with breadcrumbs. 5. Bake at 375 degrees for 25 minutes. 6. Serve with assorted crackers or bread sticks, or my favorite is tortilla chips. |
