This is my cousin's cake recipe...This is a crowd pleaser as everyone asks her to make it at all the church functions. Ive also made the cake and its delicious.... Ingredients:
2 cups all purpose flour |
2 cups sugar |
1/2 teaspoon salt |
1 stick parkay margarine (parkey is the best) |
1/2 cup shortening |
3 tablespoons cocoa |
1 cup water |
2 eggs |
1/2 cup buttermilk |
1 teaspoon soda |
Directions:
1. In a bowl add flour, salt and sugar, set aside 2. In a sauce pan melt margarine and shortening together 3. Add cocoa and water to margarine mixture and bring to a boil 4. Pour over flour mixture and mix well 5. Beat eggs and add to mixture 6. then add soda to the buttermilk, stir and add to mixture 7. Bake cake in a greased and floured jelly roll pan for 20 min at 350 degrees 8. For the icing melt one stick of parkey margarine 9. add 3 tablespoons of cocoa to that then add 6 tablespoons of 10. evaporated milk 11. Add a 16 oz box of powdered sugar, one teaspoon of vanilla and 1/2 to one cup of nuts 12. spread on cake while warm. |
