A spinoff of a popular pie recipe using as little sugar and fat as possible for my diabetic friends and relatives Ingredients:
one low-fat graham cracker crust or your homemade crust |
1 12-oz diet lemon-lime soda |
3 rounded tablespoons cornstarch |
one 3-oz box sugar-free gelatin |
one quart sliced strawberries, fresh or frozen with no added sugar |
fat-free whipped topping (opt) |
Directions:
1. IIn medium-sized saucepan, pour in soda and stir in cornstarch. Boil until mixture is clearer than it was at first. I use a whip to thoroughly mix the cornstarch into the soda. 2. When clear enough, add gelatin (dry) and stir or whip into mixture until dissolved. Cool mixture. 3. Add sliced strawberries, stir to coat, and pour into pie crust. Refrigerate 3-4 hours until set. 4. Top with whipped topping if desired. 5. A nice change to use fresh peaches with lemon gelatin. |
