A lovely moist loaf carrot cake. The recipe makes two loaves. Ingredients:
500 g carrot |
1 apple |
1 orange |
50 g raisins |
2 eggs |
100 g brown sugar |
2 tablespoons honey |
100 g oatmeal |
400 g plain flour |
125 g butter |
2 teaspoons baking powder |
1 teaspoon bicarbonate of soda |
1 teaspoon cinnamon |
1 teaspoon mixed spice |
Directions:
1. Grate the carrot, apple and zest of an orange into a large mixing bowl. 2. Add the spices, sugar, honey and raisins and mix well. 3. Beat the two eggs into the mixture. 4. Melt the butter and pour onto cake mixture. 5. Add the oatmeal, flour, baking powder and bicarbonate of soda and fold into the batter. 6. Pour mixture into two loaf tins and bake at Gas Mark 4 for 1 hour. |
