My dear friend Betty's favorite hot chicken salad! It is made special with cashews and celery, then topped with shredded cheese and potato chips. Ingredients:
2 cups chopped cooked chicken |
1 cup chopped celery |
1/2 cup cashews |
1 cup mayonnaise |
1 small onion, grated |
1/2 teaspoon salt |
2 tablespoons lemon juice |
1/2 cup shredded cheddar cheese |
1 cup crushed potato chips |
Directions:
1. Preheat the oven to 400 degrees F (200 degrees C). 2. In a medium bowl, mix together the chicken, celery, cashews, mayonnaise, onion, salt and lemon juice. Transfer the mixture to a casserole dish, then top with shredded cheese and potato chips. 3. Bake uncovered for 20 minutes in the preheated oven, or until heated through and bubbly. |
