Mom met Betty through church and she quickly became a welcomed addition to our family. I'm submitting this recipe because 1) it's easy to make, 2) is a good way to combine cabbage and cheese, and 3) the men I've served it to really like it. Ingredients:
1 medium head cabbage, coarsely chopped |
8 ounces extra-sharp cheddar cheese, grated |
3 tablespoons butter or 3 tablespoons oleo |
3 tablespoons flour |
1 3/4 cups milk |
1/3 cup seasoned bread crumbs |
salt and pepper |
Directions:
1. Boil the chopped cabbage 8-10 minutes. Drain well. If not, cheese sauce becomes watery. 2. Melt butter in saucepan; add flour and stir. 3. Add milk (a little at a time); stirring until thickened. 4. Add grated cheese; stir until melted. 5. Salt and pepper to taste. 6. Spray casserole dish with non-stick spray. 7. Layer cabbage and cheese, making cheese sauce the last layer. 8. Sprinkle with breadcrumbs and butter or oleo. 9. Bake at 350 degrees for 45 minutes. |
