Simple but really good. Great to make ahead and keep in fridge and just cook up any time or easily heated or toasted for a quick breakfast! Ingredients:
1 egg |
1 cup flour |
3/4 cup milk |
2 tablespoons vegetable shortening |
1 tablespoon sugar |
3 teaspoons baking powder |
1/2 teaspoon salt |
1 medium banana, 1/4 inch pieces (about 1/2 cup) |
1/4 teaspoon nutmeg |
Directions:
1. Beat egg with hand beater until fluffy. 2. Add rest of ingredients and mix until just moistened, but do not overmix. 3. Grease a griddle and heat. 4. Drop about 3 tbsp of batter onto hot griddle per pancake. 5. Flip once the edges start to bubble and appear dry. 6. Cook opposite side until golden brown. |
