This is a really easy recipe for stir-fry and a quick way to cook up some vegetables. This recipe uses fresh broccoli and pre-packaged chicken to make it easier. Ingredients:
1/2 cup chicken broth |
2 cups sliced mushrooms |
1/2 sweet onion, sliced |
1 small head broccoli, cut into spears |
1 tablespoon tamari or soy sauce |
1/4 cup creamy peanut butter |
1 pinch red pepper flakes (optional) |
1 (12 ounce) package shredded coleslaw mix |
3 cups bean sprouts |
1 (9 ounce) package diced cooked chicken breast meat |
1 tablespoon toasted sesame seeds (optional) |
Directions:
1. Bring the chicken broth to a boil in a large, deep skillet over medium-high heat. Add the mushrooms, onion, and broccoli; cover, and steam until tender, about 5 minutes. Stir in tamari, peanut butter, and pepper flakes until smooth. Add the coleslaw mix, bean sprouts, and chicken; cook until heated through. Sprinkle with toasted sesame seeds to garnish. |
