This delicious cake needs to be refrigerated until serving time. If you plan to take it to a picnic or carry-in dinner, I'd recommend freezing it in advance and transporting it in a cooler. Prepare yourself for lots of teasing about the name and lots of compliments about the taste! From the kitchen of Billie Boulton, Florissant MO. Ingredients:
1 duncan hines yellow cake mix (or white) |
1/2 cup sugar |
2 ounces crushed pineapple |
1 (5 ounce) box instant vanilla pudding |
1 (8 ounce) carton cool whip, thawed |
1/2 cup pecans, chopped |
1/2 cup shredded coconut |
Directions:
1. Bake cake mix as directed on box. Use a 9x13 pan.
2. Punch holes in the cake and set aside.
3. Cook sugar and pineapple until boiling well. Pour over the cake and refrigerate overnight.
4. Prepare vanilla pudding as directed and pour over cake.
5. Top with Cool Whip.
6. Sprinkle with pecans and coconut.
7. Keep refrigerated or frozen prior to serving.
