Better Than Sex Cake (Pineapple-Coconut)

This cake is unquestionably the most amazing cake I have ever had. If you want to lower the calories you can use fat free cool whip, fat free reddi whip, or other low calorie whipped cream. Use fat free or sugar free pudding mix (like jello), and reduce the amount of coconut you use to top the pudding, or take it out all together. Note that these changes will result in a less amazing cake, but im sure it will still taste great.
Ingredients:
19 oz. yellow cake mix, 3/4 of bag
1/2 c. egg beaters
3/4 c. milk, 1 1/2 tsp. vanilla extract
10 oz pineapple, crushed
1/4 cup sugar
2 c. skim milk
1/4 c. cornstarch
3/4 c. sugar
1/2 c. egg beaters
2 tbsp. butter
1 c. unsweetened coconut, natural, toasted
1 c. cool whip, 2 c. cool whip lite
Directions:
1. CAKE: Prepare as directed on bag, using 19 oz. of mix (weigh out) and ingred. listed. (This is the homemade cake mix recipe)
2. Let cake cool completely and then poke holes in the cake with a fork, chopsticks, skewer, whatever.
3. PINEAPPLE TOPPING: Heat pineapple (with the juice) and 1/4 c. sugar over low heat until sugar is dissolved and mixture is warm, but not hot.
4. Pour sugar/pineapple mixture evenly over cake letting the juice soak down and spreading the pineapple over the top.
5. PUDDING LAYER: Using milk, cornstarch, and 3/4 c. sugar, make pudding, temper in egg. Add butter and 1 tsp. vanilla at end. Cool to room temp. and pour over cake.
6. FROSTING LAYER: Thaw Cool Whip, spread over pudding. Meanwhile, Toast coconut (on foil, Toaster 2.5) and then sprinkle over top.
7. **Alternately, make Diplomat Cream- fold in softened pkt of gelatin and then 1 1/2 c. cool whip into pudding.
8. Cool cake in fridge for at least 3 hours, overnight would be better. This cake gets better with age.
