Better Than Grandmas Potatoes

Rich, buttery mashed potato casserole.
Ingredients:
3 lbs baking potatoes, peeled and cut into chunks
2 1/2 qts chicken broth
4 small carrots, peeled and cut into 1/2 in pieces
1 small onion, chopped
1/4 - 1/2 c butter or margarine (i lean more toward a half cup)
1 tsp dried dill
1 1/2 c sour cream
3 tbsp chopped fresh parsley (or just shake in some dried parley like i do)
1 tsp salt
1/2 tsp coarse ground pepper
1 tbsp butter or margarine, melted
Directions:
1. Preheat oven to 325
2. Combine potatoes and broth, bring to a boil.
3. Reduce heat and simmer 15 mins, add carrot and onion, simmer another 15 - 20 minutes until pots are tender. Drain.
4. Combine cooked veggies, butter and dill in a large bowl, mash.
5. Add sour cream, parsley, salt and pepper, stirring well.
6. Spoon into an 11x7 greased baking dish, dot with melted butter, cover and bake for 1 hour.
