2 cups cider vinegar |
1 cup water |
1 cup sugar |
1/4 teaspoon pickling spices |
1/2 teaspoon mustard seeds |
1/2 onion (halved) |
1 large bay leaf |
1 1/2 teaspoons peppercorns |
1/2 bunch dill (minced) |
4 beets (cooked, peeled, sliced) |
6 hard-boiled eggs (peeled) |
Directions:
1. Bring the vinegar, water, sugar, pickling spice, seeds, onion, bay leaf, peppercorns and dill to a boil. 2. Reduce. Cover. Simmer 30 minutes. 3. Let cool. 4. Add the beets and eggs. 5. Cover. Chill at least 72 hours. |
