Ingredients:
2 cups cider vinegar
1 cup water
1 cup sugar
1/4 teaspoon pickling spices
1/2 teaspoon mustard seeds
1/2 onion (halved)
1 large bay leaf
1 1/2 teaspoons peppercorns
1/2 bunch dill (minced)
4 beets (cooked, peeled, sliced)
6 hard-boiled eggs (peeled)
Directions:
1. Bring the vinegar, water, sugar, pickling spice, seeds, onion, bay leaf, peppercorns and dill to a boil.
2. Reduce. Cover. Simmer 30 minutes.
3. Let cool.
4. Add the beets and eggs.
5. Cover. Chill at least 72 hours.
