THIS IS NOT YOUR LOCAL SUPERMARKETS SALAD. WITH MUSTARD, SOUR CREAM, AND CHOPPED VEGGIES, THIS VERSION TAKES ON A SOPHISTICATED FLAIR. Ingredients:
1c.dried elbow or medium shell macroni or rotini |
1/3 c. light dairy sour cream |
1/4 c. low fat mayonnaise dressing or light salad dressing. |
2tsp. dijon-style mustard |
1to 2 tsp. fat-free milk |
1/8 tsp black pepper |
1/2 c. chopped green sweet pepper |
1/4 c. shredded carrot |
2tbsp. sliced green onion |
1/4c. diced cheddar cheese (1oz.) optional |
Directions:
1. 1) COOK MACARONI ACCORDING TO PACKAGE DIRECTIONS, EXCEPT OMIT THE OIL AND COOK IN LIGHTLY SALTED WATER. DRAIN WELL. RINSE WITH COLD WATER; DRAIN AGAIN. 2. 2) FOR DRESSING, IN A SALAD BOWL STIR TOGETHER SOUR CREAM , MAYONNAISE DRESSING, MUSTARD, 1 TSP. OF THE MILK, AND THE BLACK PEPPER. 3. 3) STIR THE COOKED MACARONI, SWEET PEPPER CARROT, AND GREEN ONION INTO THE DRESSING. TOSS LIGHTLY TO COAT. IF DESIRED, GENTLY STIR IN CHEESE. COVER AND CHILL FOR AT LEAST 3HRS. OR UP TO 24HRS. BEFORE SERVING, STIR IN THE REMAINING MILK IF NECESSARY TO MOISTEN SALAD. 4.
